Yummy and tasty: Gujarati Khandvi!
Khandavi is a pure and traditional Gujarati bite-sized snack that is typically served during tea times. But well one can have them for breakfast as rule. No rules there! It is like paste rolled only difference is it’s made with gram flour. It tastes super yummy and is known with various names Patuli, dahivadi and is famous as Surachilli vada in Maharashtra. Such small petite dish but is very famous and eaily available across the streets of Gujarat. It’s a healthy snack though. It is a popular street food in Gujarat as well as Maharashtra. It tastes super amazing. One can easily make this as home and have breakfast or even pack it for their kids’ lunch. Serves: 2 people
1. Gram flour: 100gms
2. Curd: 100gms
3. Coconut: a little(shredded)
4. Fresh coriander: a little(chopped)
5. Refined oil: a little
6. Red chili powder: ½ tbs
7. Turmeric: ½ tbs
8. Ginger-green chili paste: 1tbs
9. Black mustard: a little
10. Salt: as per taste
11. Asafetida: 1 pinch
Step 1: Making khandavi mixture
At first in medium bowl put gram flour, curd, turmeric, red chili powder, ginger-green chili paste and salt and pour 2 bowl of water and mix it well. Make a fine lump free batter by whisking it.
Step 2: Cooking the batter
Now put a pan on the gas and pour the khandavi batter and cook it by continuously stirring it on medium flame till the mixture thickens up.
After it has thickened do check on it by spreading a little of the mixture on a plate. Let it cool down and try rolling it, if it rolls up then it is perfectly done.
Step 3: Making the khandavi rolls
Now take a steel plate and turn it towards downward. Pour the khandavi batter with a ladle and then spread it into an even and thin layer with a butter knife. Let it rest for a few minutes.
Now after a few minutes with a knife cut strips of khandavi accordingly. With very light hands and careful way rolls the khandavi into small rolls and keep on a plate.
Step 4: Preparing the tadka
Now take a tadka pan and put it on gas and pour refined oil in it and heat up. Put the mustard seeds in and asafetida and then pour all the tadka on top of the khandavi.
Step 5: Serve up
Now garnish with grated coconut and freshly chopped coriander and serve well with green chutney and enjoy!
1. The mixture of the khandavi should be lump free.
2. It should be cooked till it turns thick but do stir it continuously otherwise it will stick to the bottom of the pan.
3. We used a steel plate as our base for khandavi as it very easy to make rolls on steel plate that too without greasing.
4. Serve well with dipping and enjoy with a hint of tadka.
