Hi friends!!🌞 Let me show you 6 days of my vegan breakfasts! All of these are simple to throw together, delicious and full of nourishing ingredients. What did I mean when I said ” what makes you feel good or bad “. These words are unfortunately ingrained into diet culture and tend to give a positive or negative association to certain food. In the context I was speaking was not saying the food is good or bad, I was trying to point out that certain foods may give us energy, make us feel lively, nourished and satisfied as other foods may make us feel slow, groggy, bloated or uncomfortable and unsatisfied. These foods will be different for everyone because all of our bodies are uniquely special. Fuel your own body the way it needs!! 💛

~Recipes~

Granola:
1 cup oats
1/3 cup chopped dates
1/3 cup roughly chopped almonds
1/4 cup buckinis
1/4 cup puffed quinoa
1/4 cup currants
1/4 cup + 1 tbsp shredded coconut
1 scoop protein powder ( I used berry but it would be great with vanilla! )
3 tbsp tahini
3 tbsp maple syrup
1 tbsp coconut oil
1/4 tsp salt

How to :

Mix everything in a large bowl

Line on a greased baking tray ( I used 1/2 tbsp coconut oil ). Use a spatula to evenly spread it out. I push mine down with a little pressure so when it bakes it really sticks together and forms those beautiful clusters! Bake @325F for 18- 20 minutes

Take it out and allow it to cool for 15 minutes

* you can also line it on parchment paper!
* Keep an eye on it and don’t let it burn. Every oven is different and it might need less time in yours!

Protein shake:
1/2 large banana
1/4 cup hemp seeds
1 tsp ashwagandha
1 scoop salted maca caramel protein powder
1 package of instant coffee
1 cup water
1/2 cup oat milk

– I doubled this recipe ( but still used 1 banana ) and also replaced the raspberries with blueberries!
